Farmer's markets provide the best and fresh produce for our bodies. We wanted to celebrate the start of the farmer's markets and summer season with this Grilled Zucchini and Peanut Chicken with Classic Creamy peanut butter. Perfect for BBQs, picnics, or an easy weekday meal this summer.
Zucchini is a light and versatile mild fruit that can be added to most dishes for a healthy component. Zucchinis are rich in minerals, vitamins, and plant compounds that has many health benefits. Health benefits range from improved digestion to a lower risk of heart disease.
Taste of Home has made zucchini the star of the dish and thoroughly enjoyed this healthy option for summer.
2 medium Zucchini, cut diagonally in 1/2 inch slices
1/8 TSP Salt
1/8 TSP Pepper
3 TBSP Brown Sugar
2 TBSP Soy Sauce
1 TBSP Classic Creamy butter
1 TBSP Lime Juice
1/4 TSP Ground Ginger
1/4 TSP Cayenne Pepper
1 Cup Chicken, cooked and shredded
2 TBSP Red Onion, finely chopped
1 Carrot, julienned
Cilantro, chopped for serving
1. Prepare a grill rack with oil and place over medium heat. Place zucchini slices on grill, cover, and cook 3-4 minutes per side or until tender. Sprinkle with salt and pepper.
2. In a small saucepan, whisk and bring to boil water, brown sugar, soy sauce, Classic Creamy butter, lime juice, ginger, and cayenne pepper. Reduce heat, simmer uncovered 2-3 minutes or until slightly thickened, stirring occasionally. Stir in chicken and onion, heat through.
3. Top zucchini slices with chicken mixture and sprinkle with carrots and cilantro. Serve.
A little sweet and a little spicy, this recipe will stretch your imagination on zucchini and the different ways it can be used. We leveled up the texture journey with Classic Creamy peanut butter and it made the dish more intriguing.
