Making these Energy Bites, we wanted to eat the whole lot in one sitting. These will make you think you are eating oatmeal chocolate chip cookies.
Keeping it simple with feel-good ingredients, Smooth Almond butter was able to shine through this recipe. With these energy bites you are able to customize with protein powder or ground flaxseed for added nutrients and power. This no-bake and effortless recipe from Healthy Fitness Meals is a great snack for all ages.
INGREDEIENTS
1 1/2 cups Rolled Oats
1/2 cup Smooth Almond butter or any other PB Love butters
1/4 cup Honey or Maple Syrup
1/3 cup Chocolate Chips
2-3 TBSP water
STEPS
1. Place Oats, Smooth Almond, and honey/maple syrup in a large bowl.
2. Add 2 TBSP water and stir until a stiff dough forms. If the mixture is too dry add the additional water until desired consistency is reached.
3. Stir in chocolate chips.
4. Scoop 1 TBSP sized pieces of dough and roll into balls. Place on a sheet pan lined with parchment paper. Should end up with 12-14 protein balls.
5. Place in the fridge to chill for at least 30 minutes, then serve. Store in the fridge.
Toss 2-3 in a bag for a great mid-day pick up out on the trail or at work. Make sure you share with others or keep all to yourself. No judgement at all.
