We used our Smooth Almond butter to prepare rolled oats soaked in coconut milk and whole, greek yogurt.
Ingredients:
1/3 cup rolled oats
3/4 cup coconut milk
1/4 cup Greek yogurt
handful fresh blueberries
1 tbsp slivered almonds
1 tsp vanilla
1 tbsp chia seeds
1 - 2 tbsp Smooth Almond butter
Colorado honey (to drizzle)
Steps:
1. In a small bowl, mason jar or cup, add coconut milk and greek yogurt and mix well with a spoon or fork.
2. Add in rolled oats, chia seeds, and vanilla.
3. Top with lid, shake or stir well, and store in the refrigerator overnight.
4. The next day, top with remaining ingredients and enjoy!
