PB&J Swirl Cake

School is in session! Nothing is more classic for lunch than a Peanut Butter & Jelly sandwich. But what if it was a cake and delicious anytime of the day. We made it happen with this PB&J Swirl Cake.

The cake base itself is not too sweet that allows for Classic Crunchy and Strawberry Limoncello preserve swirl top to shine. Get a slice of cake anytime of the day, it’s the only way with this recipe.

INGREDIENTS

Cake Base

2 1/3 cups All-Purpose Flour

1 1/2 tsp Baking Powder

1 1/2 tsp Baking Soda

1/2 tsp Salt

1 cup Granulated Sugar

1/2 cup Vegetable Oil

1/2 cup Classic Crunchy peanut butter, at room temperature

3 large eggs

1 tsp Vanilla Extract

1 cup Buttermilk or Whole Milk

PB&J Swirl

1/2 cup Classic Crunchy peanut butter, at room temperature

1/3 cup Powdered Sugar

1 tbsp Vegetable Oil

1/2 tsp Vanilla Extract

1 jar Strawberry Limoncello preserve

STEPS

  1. Preheat oven to 350°. Prep a 9x13 baking dish with parchment paper and cooking spray.
  2. Sift flour, baking powder, baking soda, and salt in a bowl and set aside.
  3. In a separate bowl add the sugar, oil, and Classic Crunchy peanut butter. Mix on medium-high speed until smooth, about 2 minutes. Mix in one egg at a time, followed by vanilla extract.
  4. Switch to low-speed and carefully add 1/2 of the flour mixture and beat until just combined. Slowly pour in buttermilk or whole milk, beat until just combined. Add the remaining flour mixture and beat until smooth.
  5. Pour cake mixture into prepared baking dish and smooth out the top, set aside.
  6. Making the Swirl: In a small bowl mix together Classic Crunchy, powdered sugar, vegetable oil, and vanilla extract.
  7. Dollop teaspoons of Strawberry Limoncello preserve onto the cake batter, spacing them about 1 inch apart. Dollop teaspoons of peanut butter mixture between the preserves. Drag the tip of a butter knife through the dollops of peanut butter and jelly to create a swirl pattern.
  8. Bake for 30-40 minutes or until a tester comes out clean. Cool completely before cutting into squares.
