Coleslaw is a dish that is never the same and has many variations depending on the family, origin, and recipe. This Miso Peanut Slaw had us coming back for thirds.
At its core, coleslaw is a combination of raw cabbage and a vinaigrette originating from the Netherlands. The vinaigrette is the area for play and by using miso and peanut butter, an Asian point of view was achieved. Miso is a common Chinese ingredient used for sauces, dressings, batters and soups. It is able to give recipes a salty, tangy, and savory taste.
This coleslaw itself was a combination of our own different slaws had in the past. Thank you to Gathered Nutrition for providing the recipe for the Miso Peanut Sauce used.
1 cup red cabbage, thinly sliced
1 cup green cabbage, thinly sliced
2 medium carrots, peeled and grated
1 cup broccoli, thinly sliced
1/2 cup cilantro, finely chopped (optional)
Miso Peanut Sauce
1/4 cup Classic Creamy with Sea Salt peanut butter
2 TBSP miso paste (white miso)
3 TBSP rice vinegar
2 TBSP JoJo Siracha
1/2 TBSP soy sauce
1 TSP sesame oil
4 cloves of garlic, minced
1/2 TSP ginger root, minced
2-4 TBSP water, to thin
1. Toss together slaw the red and green cabbage, carrots, broccoli, and cilantro in bowl and set aside
2. In a clean PB Love Co jar combine Classic Creamy with Sea Salt peanut butter, miso paste, rice vinegar, JoJo Siracha, soy sauce, sesame oil, garlic, ginger, and 2 TBSP water. Close the jar tightly and shake until sauce is smooth. Slowly add water to thin out the sauce if need be.
3. Drizzle Miso Peanut Sauce over the slaw mixture and toss till all ingredients are coated.
4. Serve or let it sit covered in the refrigerator for at least 2 hours for an enhanced flavor. Garnish with sliced green onions and sesame seeds. Enjoy.
